Vegan Beet Burger Recipe

This really was as good as it looks, I've made lots of vegan burgers before and what I love about this recipe is how simple it is. There isn't a massive list of ingredients and it really didn't take long to whip these up. I am a burger girl, I looove burgers. I've been eating a lot less meat, I am in no way a vegetarian, but animal products are getting smaller and smaller in the list of foods I cook with and eat. I cook meat about once a week and because I only buy local and organic it's expensive! So finding alternatives to some of my favourite dishes is something I'm on a mission to do. We've loved coming up with vegan dishes lately, it's a bit more of a challenge and my body just feels a lot better after eating a plant-based meal. 

Vegan Burger Patty Ingredients

- 1 cup grated yam
- 1/2 cup grated raw beet
- 1/2 cup chickpeas
- 1/4 cup cooked quinoa
- 1 tsp cumin
- 1/2 tsp onion powder
- 1 tsp paprika
- 1 tsp garlic salt
- 1 Tbsp flax egg (ground flaxseed mixed with water)

How to make a Vegan Beet Burger

1. First, you'll need to cook up some quinoa and set aside. I usually cook a big pot of quinoa and have it on hand for various recipes, my daughter loves it just with almond milk as cereal! Also, my grandma gave me an amazing pancake recipe that has quinoa snuck in there, I'll have to post it here soon, it's amazing, and full of goodness when you're craving some weekend pancakes!

2. Prepare your flax egg and set it aside while you're cooking your quinoa.

3. Grate your yam and beets. Or throw them in a food processor to chop them up. 

4. Throw everything in a bowl and mix together well, use a fork to mash up the chickpeas. Form into 2 patties with your hands.

5. Heat up your pan with your oil of choice, I usually use avocado oil as it's great for high-temperature cooking. 

6. Cook on each side for about 4-5 minutes, it will crumble apart a little bit, just use a spoon or spatula to force it together. At first, when I cooked it I thought it was a fail because it wasn't sticking together like a patty should. Once it's cooked and nice and crispy on the outside it'll stay together well enough ;) and once it's in the loaded burger it stays in place as much as it needs to.

7. We loaded up our burgers with fresh sprouts and avocado mashed up with egg-free mayo. it was such a good combo!! Threw it on a pretzel bun and devoured these babies.
