Vegan Lentil Tacos

I am such a sucker for tacos and crave them a few times a week for dinner. I was really excited to learn how to make vegan tacos so I can change it up throughout the week. These were super easy and SO tasty. We teamed up with Christine from Plant-Eaters Club and she whipped these up so fast. YUM! 

Lentil tacos with cashew jalapeno sour cream


Serves 4

-1.5 cup red split lentils
- 1 small onion
- 5 cloves of garlic
- 1 lime (juiced)
- 1/3 fresh jalapeño (or to taste)
- 1 bell pepper
-salt and  fresh cilantro to taste



1) cook lentils in a pot – set aside.
2) sauté the veggies and remaining ingredients (besides lime) in a frying pan with a little bit of oil.
3) add lime juice and the lentils to the veggies in the fry pan, stir it all together and serve hot with your favourite tortillas and sauces!

Jalapeno cashew sour cream:

- ½ fresh jalapeno (more or less to taste)
- 1 lime (juiced)
- 1.5 cup soaked cashews
- 1 cup water
- pinch of salt
- 2 cloves garlic



Blend all ingredients on high until smooth! Add more cashews or water to desired thickness. 

***THIS SAUCE IS SO GOOD!!! I looooved it. The next day I made breakfast bowls and used this as the sauce. I still had some left over, so I decided to try it on a pasta, and it was SO GOOD! I love a good sauce that can be so versatile.
