I've shared this recipe on a Link Love post in the past but thought we would whip up a quick recipe post, because I don't know about you, but it just makes a lot more sense seeing photos of something! I (Tegan) make this a lot. It's easily adaptable depending on what veggies you have on hand, so you can usually make it even if you have just a bag of frozen veggies, and of course some tasty cheese. I usually use grape or cherry tomatoes, mushrooms, onion, and sometimes add asparagus, peppers, zucchini, broccoli or greens, you can't really go wrong.
Start by chopping up your veggies, for this recipe we used:
- a handful of crimini mushrooms
- package of grape tomatoes
- 6 cloves of garlic roughly chopped
- a handful of basil chopped
- 1 shallot
- olive oil
- spinach egg noodles
- pecorino cheese
On medium-high, warm up the oil, then add the garlic and onion. Cook for about a minute and then add the rest of the veggies. Stirring often, let them cook for about 5-7 minutes. Or until they're the texture you desire, I probably like the tomatoes and mushrooms cooked a bit longer than others may like them so I cook for a bit longer, until all the flavours are nice and combined together. In the meantime, cook your noodles, these ones take about 4 minutes to cook.
Strain the noodles and add to the veggies, mix together with another sprinkle of olive oil, and serve with lots of pecorino or parmesan cheese. Bon Appetit!
