Vegan Ice Cream Cake // Treatsa Pizza

How to make your own Vegan Ice Cream Cake

As a kid, my family always went to Dairy Queen to get a Treatza Pizza for special holidays. I looooove them, and Tegan always asked for ice cream cake for her birthday. Although we still indulge in DQ's cakes, we thought it would be fun to make our own! It's super easy, healthy and it's a cake you can feel very good eating. Yes. Please.

Ingredients for Chocolate Crust

  • 20 soaked dates

  • 2 tbsp flax seeds soaked ( 1-1 ratio with water ) 
     
  • 6 tbsp gluten-free flour (any flour preferred is fine) 
     
  • 5 tbsp cacao powder
     
  • 1 tsp vanilla
     
  • 1/4 cup water
     
  • 3 tbsp coconut oil
     
  • 1 tbsp maca powder
     
  • some salt to taste 

Directions for Crust

Put all ingredients into Vitamix or high-speed blender and blend until smooth. Line cake pan with parchment paper and pour the crust into cake pan. (We cut ours into a circle so it fit evenly in the pan).

Ingredients for the Vegan Ice Cream

  • 1 can of coconut cream

  • 1 cup of soaked raw cashews

  • 3 tbsp coconut oil

  • 1 tbsp maple syrup

  • 2 drops of stevia for added sweetness

  • and a pinch of salt :) 

Blend, and then pour on top of Chocolate Layer and set aside 

Put the Icecream cake into the freezer for a good 3-4 hours until frozen! 

Ingredients for Caramel Sauce & Chocolate Sauce

  • 20 soaked dates

  • 1 cup of date water

  • a pinch of salt

  • a pinch of cinnamon

    Blend the ingredients above and remove half from the blender, this is your caramel sauce. For the chocolate sauce, add 2 tbsp cacao to what remains in the blender and mix until smooth. Layer up your ice cream cake with goodies - we used walnuts and chocolate chunks and then smothered it with the chocolate and caramel sauce...mmm... ENJOY!
