Vegan Blueberry Pear French Toast

Who doesn't love a good french toast recipe SMOTHERED in berry sauce?! We made a vegan - version with Christine of Plant-Eaters Club with cinnamon and chia seeds! 

Vegan Blueberry Pear French Toast

Vegan Batter:

  • 1 cup of unsweetened almond milk
  • ¼ cup soaked chia seeds (about 2-tbsp dry seeds)
  • ¼ cup cinnamon
  • 1 tbsp soaked egg replacer (bobs red mill)  *if you don’t have this ingredient, no sweat! Use a different thickening agent or a bit more chia seeds.
  • 1 tsp salt
  • 1 tsp of vanilla extract
  • 2 drops of stevia

Mix together.

Directions for pancakes:

1. slice up your favourite bread

2. dip both sides of the slice of bread in the batter so it is evenly covered

3. place on a frying pan with about a teaspoon of coconut oil

4. flip at your leisure

5. stack all the toppings on the there and ENJOY

Blueberry Pear Sauce:

  • 2 cups blueberries
  • 1 juiced lemon
  • 3 drops of stevia
  • sprinkle of salt
  • 2 tablespoons “Heart Beets” latte mix *optional - can use cinnamon or nutmeg and a bit of turmeric instead

warm all ingredients in a pot on the stove stirring frequently and squishing the blueberries, then simmer for 10 min


Cashew Cream:

  • 1 juiced lemon
  • 1.5 cups soaked cashews
  • pinch of salt
  • 1 cup of water


Blend all ingredients on high until smooth

We sliced up some pears and heated them in a pan with a bit of coconut oil and maple syrup to make them super tasty and a bit crispy.  

This recipe was soooo tasty! We bought our bread from Matchstick Coffee shop - one of our favourites :)
