Potato wedges with Vegan Sauce

OH BABY. Here is a recipe that is bound to win over ANY crowd. Can't wait to make this the next time I have some friends over for a movie night! It's so yummy, and the homemade ketchup and vegan mayo are INSANELY good on these pan fries. Wow.

First step in making these delicious pan fries : 

Scrub your potatoes up real good! We added some sweet potatoes too for some added flavour  :) Cut them into slices and lay them onto a pan, drizlle coconut oil over the potatoes and sprinkle with salt. 

*tip! If your coconut oil is solid, scatter coconut oil chunks over the potatoes and sprinkle with salt. Put into oven and after 5 minutes take them out and mix them into the melted coconut oil. 

Cook for about 15 minutes at 400 and then flip them on the pan until tender yet crisp! 

 INGREDIENTS for ketchup:

  • 5 tbsp tomato paste 
  • 1/3 cup apple cider vinegar
  • 2 cloves of garlic
  • 1 tsp onion powder
  • 1/2 cup black beans
  • 2 tbsp molasses
  • pinch of paprika and chilli powder
  • 1 tsp curry powder

*MIX UP in blender and serve

INGREDIENTS for Mayonaise

  • 2 cups cashews 
  • Juice from 1 lemon
  • 2 tbsp apple cider vinegar 
  • 1 pinch mustard powder
  • 2 cloves of garlic
  • 1 tsp salt
  • 1 cup of water

*MIX UP in blender and serve

Lay out your pan fries and cover in your sauces! We chopped up some green onion and sprinkled some nutritional yeast all over it! OH my these were good.
