I made this Vegan breakfast bowl for my vegan friend who came over the other day for breakfast. It was so good that I made it for my boyfriend, and again the next week for my roommate, and today for the blog! I'm hooked. There are so many amazing ways to work with vegan food, and I am really interested in gearing toward a more vegan based diet. It is fun to explore more with spices and vegetables to add more depth of flavour to my meals. I walked to my nearest grocery store and loaded up on spices, chick peas, nuts, and loads of tahini - love that stuff. Vegan Scramble Recipe with Turmeric Tahini Sauce
This is the first recipe that I've ever used tofu for breakfast! Vegan scramble is definitely something I will be continuing to make because it is so freaking good. With the turmeric tahini dressing, I would prefer it over eggs any day. It was super easy to make and didn't take long with a couple pans going at once.
What you will need to create your Vegan Scramble Recipe:
For the Vegan Tahini and Turmeric Sauce:
- 3 tbsp tahini
- 1 tbsp honey
- 1 tsp turmeric
- 2 tbsp lemon (I used juice from one lemon)
- feel free to grate some ginger as well as throw some black pepper in there
Make the dressing at any time, I threw all the ingredients into a magic bullet before I made the recipe, and set it aside, so It would be ready to go as soon as I was done cooking.
For the Vegan Scramble:
- one red pepper
- green onion
- a few cloves of garlic
- 1/2 red onion
- olive oil
- extra firm tofu
- cayenne pepper
- black pepper
- garlic powder
For the rest of the Vegan Bowl:
- sweet potatoes
- black beans
- feel free to add some walnuts and almonds if you have them, they go really good with this recipe!
How to create your Vegan Scramble Recipe
Pour a couple tablespoons of desired oil into your pan and add chopped up red onion, pepper, garlic, and green onion. Saute for 4 minutes. Add tofu by breaking it up with your hands and adding to the pan. Add turmeric and garlic powder and fry it up for around 8-10 minutes.
In a separate pan, fry up sweet potatoes in olive oil, and once a bit soft, add the broccoli for another 5 minutes. Or, alternately, bake the sweet potatoes in the oven with olive oil, salt and pepper while you are making the scramble, and boil the broccoli.
In another pan, add a bit of oil, once heated add the black beans as well as chopped up kale just until it darkens in colour.
Add everything into a bowl, top with tahini turmeric sauce, salsa, avocado, greek yogurt, and whatever else you prefer to top your bowl with!
