Kid Friendly Chicken Pot Pie

We’re so excited that one of our favourite snacks is now made with 70% Organic Ingredients! I’m pretty picky with what I feed my daughter and what I let her snack on, so when Goldfish® reached out to us about collaborating on a recipe using their new made with 70% organic ingredients cracker, I was all for it! This is a great recipe because I am always looking for ways to sneak green things into meals and snacks, and it’s perfect for the whole family.

Preheat oven to 400.
Warm 1 tsp of oil in a medium sized pot (I used avocado oil)

Add 1/2 chopped onion & 2 chopped cloves of garlic and cook for about 5 minutes

once onion is translucent, add:
- 1 chopped rib of celery
- 1 diced medium potato
- 1 cup of broccoli florets
- 1/2 cup of Campbell’s® Vegetable or Chicken broth

Saute for about 10 minutes

Remove from heat and add 1 can of Campbell’s® Condensed Cream of Chicken soup (or you can use Cream of Broccoli if you want a meatless option) and 1/2 cup plain greek yoghurt. Stir until combined.

I used a frozen pie crust and for the individual pies I just cut out pieces from the larger crust and added them to a small ramekin.

Cook for 30 minutes for large pie and 20 for small! Remove from oven and top with Goldfish® Made With 70% Organic ingredients crackers for a cheesy, crunchy topping!
