Breakfast Oats with Super Berry Jam

I eat a lot of oatmeal in the winter. Waking up on cold dark mornings just have me craving something warm and comforting. I love trying different combinations and toppings for my oatmeal, to keep it a little bit exciting! We made this jam with 5 ingredients: blueberries, blackberries, goji berries, elderberry syrup and chia seeds. It's so tasty and packed full of antioxidants and goodness to give your immune system a good little morning boost.

1. In a blender, combine:
- 1 cup blueberries
- 1 cup blackberries
- 1/4 cup of goji berries
- 1/4 cup of elderberry syrup

2. Blend until smooth and pour into a small pot. 

3. Bring to a boil over medium-high heat stirring constantly, once it starts boiling, bring it down to low and add 3 Tbsp cup of chia seeds. Stir occasionally and let it simmer for about 5-10 minutes.

4. Keep it refridgerated in a jar for about 1-2 weeks.

We topped our breakfast oatmeal with our homemade jam, blueberries, coconut and goji berries! So delicious!
