This Vegan Eggplant Hummus is Deeeeeeeelish!! We are so excited to start teaming up with our good friend Christine of Plant-Eaters Club! She is an incredibly talented Certified Nutritional Practitioner and self-taught Holistic chef. She works to inspire others to take steps towards a more healthy and life-giving way of eating by using whole food, high quality, and plant-based ingredients. She also hosts Holistic “Feasts” once a month at her house in Mount Pleasant; catering to specific diets and facilitating a space where friends and strangers feel welcome and at home. We are eager to learn lots of recipes and health tips from her! Get ready people, there are some VERY yummy recipes coming up!

Ingredients for Vegan Baba Ghanoush

  • 1/4 c fresh lemon juice
  • 2 roasted Italian eggplants
  • 1/2 onion
  • 2 cloves of garlic
  • 1 tbsp tahini
  • a generous sprinkle of cumin
  • salt

Split open your eggplants, and roast them in the oven at 350 for around 20-30  minutes. Once roasted, cut it up and place it in a blender. Add the rest of the ingredients and mix them together until you reach your desired texture! Easy peasy! Sprinkle some leftover eggplant on top of the dip.
We got some amazing Mary's vegan crackers which were so good!
