Chicken Rice Bowl with Tzatziki and Coconut Yams
I'm in love with Tzatziki sauce and was really excited to try making it at home, and putting it on a chicken rice bowl! This recipe only took me about 30 minutes to make in total since I already had some poached chicken sitting in my fridge.
How to make a simple healthy Tzatziki Sauce at home:
Ingredients for Tzatziki Sauce:
- 2 tbsp freshly chopped dill
- 2 tbsp olive oil
- 2 cloves of garlic
- juice from half a lemon
- 1 1/2 cucumbers, peeled and sliced
- 2 cups greek yogurt
Toss it all in a blender and voila!
Ingredients for the Chicken Rice Bowl:
- wild rice
I boiled the yams, strained them, and mashed them up with about 1 cup of coconut milk. These were soooo good and you don't need to add any butter. Sprinkle chopped almonds on the mashed coconut yams, add kale, wild rice, shredded chicken and pour that yummy tzatziki sauce all over it! This recipe is good hot or cold.
