Vanilla Pancakes with Chai Tumeric Syrup
Mmmmm! Good Morning Monday.
These are SUPER yummy, and a fun way to spice up your pancake game as we are in the thick of autumn, and pancakes are necessary...and sometimes you need something other than pumpkin ;) I used a classic pancake mix but substituted vanilla almond milk to give it a bit of a sweet vanilla taste.
Ingredients for Chai Turmeric Syrup
- 3/4 c icing sugar
- 1/2 c coconut milk
- 1 tsp cinnamon
- 1 tsp turmeric
- 1/2 cup steeped chai tea
Mix all of these ingredients together to make the yummiest chai syrup. I steeped my favourite chai tea in a mug half full so it was extra strong. I then waited until the tea was cooled before I mixed it into the syrup.
Pour over pancakes, and sprinkle with cinnamon and raspberry jam. Brew up some more chai tea, and throw some of the leftover coconut milk into the tea and top with cinnamon, YUM!
