Vegan Tofu Scramble Breakfast Sandwich
I have been making this breakfast sandwich so much lately! I have been a bit obsessed with breakfast bagels, and this tofu scramble is a super yummy alternative to your regular egg scramble bagel. Honestly, I think the secret ingredient in a good breakfast bagel is these organic sprouts. They add such a good texture and salty taste, mmm!
- 1/2 block of firm tofu
- cumin, paprika, nutritional yeast, turmeric
- salt & pepper
- siracha or hot sauce to taste
Put a bit of olive oil in a pan, and place on medium heat. Once it heats up, add some garlic and saute for about 2 minutes. Then add a teaspoon of nutritional yeast, half a teaspoon of turmeric, cumin *or paprika, a pinch of salt and pepper. Once mixed in pan, crumble tofu into the pan, breaking it up with your fingers.
My favourite bagel to whip up this breakfast is the classic everything bagel. Toss on some vegan butter or vegan mayo, sprouts, tomato, avocado and if you are feelin' spicy, throw on some sriracha!
