Coconut London Fog with Lavender Simple Syrup

Happy Autumn! What better way to kick off the new season than with a cozy drink recipe! We love London Fogs and this one is tasty. The coconut milk gives it quite a different flavour, but it's still extremely delicious. I'm really excited to have this jar of lavender earl grey simple syrup in my fridge, London Fogs all week, I may even try a little in my coffee, I'll let you know how that goes ;)

We made the simple syrup by adding to a small saucepan 1 cup of water and 1 cup of sugar (I used coconut sugar, because it was the only sugar I had in my house! I guess that's a good thing.) Add 2 Tbsp of earl grey tea and 1 tsp of lavender. 

Bring to a boil, let it boil for a few minutes and then turn the heat to low and let it simmer for about 10 minutes. Strain and pour into a sealed jar and store it for about 2 weeks. 

*Tip* I couldn't find anything to strain it with, so I poured it into my aeropress and strained it that way, it totally worked, a french press would work too,

I steeped 1/2 a cup of earl grey tea, and then added 1 tsp of the simple syrup. Fill the rest of the mug with some warm milk of your choice. This beverage tastes best when enjoyed with donuts and a good book, promise.
