We have been experimenting a little bit more with tofu lately! It is such a yummy addition to this simple salad recipe. Recently I have added it to a sweet Thai veggie stir fry, as well as adding them into salad wraps.
Ingredients for the salad dressing:
- 1.5 tbsp soy sauce
- 1 tsp minced ginger
- 1.5 tbsp avocado oil
- 1.5 tbsp hoison sauce
- 1/2 tsp sriracha hot sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
For the salad we added chopped kale, cucumber, peppers, green onion, cabbage, cilantro, and cashews. Mix well with the salad dressing above!
I'm usually not huge into "savoury salads" but this one was delicious, nice and spicy with just a touch of sweetness from the honey and hoisin sauce from the dressing.
