Matcha! You guys, I used to be obesessed with matcha, drank a big 16oz latte after every 5am opening shift of Wired Monk back when Dan and I were dating. I had a collection of different ones from T&T supermarket and drank it religiously! Then Starbucks started selling it and maybe it got old? I don't know, but I bought some a few weeks ago after Bethany shared her tasty iced matcha recipe and I just neeeeded one for myself! We made these delicious matcha blueberry popsicles and they were SO good. They didn't last very long in my freezer, and I've been drinking iced lattes almost every afternoon, so yum.
1. In a blender, combine 1 heaping tsp of matcha powder, blend with 1 can of coconut milk, you can add some sweetener if needed.
2. Pour into your popsicle mould 3/4 full.
3. Blend 3/4 cup of blueberries with 1/4 cup of coconut milk. (Or any kind of milk you have on hand - almond, regular, or coconut.)
4. Fill the rest of the popsicle mould with the blueberry mixture and freeze!
If you have extra matcha, freeze it in ice cube trays and save for an iced matcha, it's SO deeeelish.
