Piña Colada Recipe

Lindsay and I have been having some serious vacation withdrawals since coming home to Vancouver on Friday morning. It has been surprisingly cold and rainy for the end of May. It poured all weekend and we've been cooped up inside dreaming about the tropical Hawaiian air, and the warm sand between our toes.

We became a bit obsessed with Piña Coladas and picked up a bit bottle of coconut rum and made quite a few ourselves while we were in Maui! We tried a variety of combinations using: fresh pineapple, frozen pineapple, pineapple juice, coconut milk, coconut condensed milk, coconut cream. The combinations are surprisingly endless, and all amazing. You just have to get the ratio of coconut and pineapple just right without it being too sweet! All this talk of coconut and pineapple is actually making me salivate and I'm having harsh cravings, time to go chop up and freeze the pineapple I just bought!

Piña Colada Recipe - makes 4
In a blender, combine:
- 8 oz coconut rum (or less if you want them less strong!)
- 1/2 a pineapple (pre-chopped and frozen)
- 1.5-2 cups of coconut milk or cream
- handfull of ice

* recipe is still a bit by taste, start with the first 3 ingredients and add more ice if it needs thickening up, add more coconut milk if it's too thick! Enjoyyy
