This chia seed pudding parfait is such a perfect afternoon meal. What we love about parfaits is that they last in the fridge for a couple days and are easy to grab on the go!
For this parfait, we used cantaloupe and watermelon as the fruit base! We scooped out the fruit with a round spoon (I used a measuring tablespoon) and added it to the jar along with some of our favourite Oatbox granola. We added some chia seeds and voila! Super easy, healthy and a perfect Spring snack.
For the Chia seed pudding I used 1/4 a cup of chia seeds to 1 cup of almond milk. Shake them up or stir thoroughly in a jar and let sit in fridge overnight. I added 1 tbsp of hemp seeds and a sprinkle of cinnamon before serving.
