I have never thought to put granola on top of a smoothie! This scrumptious cashew cookie smoothie recipe by Haley of Brewing Happiness is AMAZING. I have been all about the almond milk lately, and have yet to try cashew milk. This smoothie makes for a very filling breakfast, OR dessert! It is full of so many healthy fats and proteins that it would also be perfect for a post work out snack. Love the idea of adding lots of toppings on my smoothies from now on! THANKS HALEY!
1 frozen banana
1 cup raw cashews, soaked in 2 cups water for 6-8 hours
1/2 cup almond milk (sub cashew milk if you wanna go cashew crazy!)
3 tablespoons greek yogurt (sub soy yogurt, but make sure it is unsweetened)
3 tablespoons maple syrup
1 tablespoon cashew nut butter
1/2 teaspoon cinnamon
1/4 teaspoon vanilla extract
- Drain your soaked cashews, and pour them into a blender.
- Add all other ingredients, blend until smooth.
- If needed, you can put the smoothie back into the freezer for 10-20 min to let it chill.
- Top with any desired toppings & eat up!
