Vegan Coconut Chocolate Mousse

This is my new favourite healthy treat. My sister-in-law Sarah, of Awesome Birth Services always inspires my cooking and baking habits. Every time I go to her place I leave with a new favourite recipe and this is one of them! (It's a bit of a revised version from a Pinterest recipe.) 

- 1 ripe hass avocado, cut in chunks (learn the best way to cut an avocado [HERE|])
- ¼ cup cocoa powder
- ¼ cup brown rice syrup
- 1 Tbl virgin coconut oil
- 1 tsp vanilla extract
- 1 can coconut cream, chilled overnight

Place avocado, cocoa powder, maple syrup, coconut oil and vanilla extract into your food processor and blend until smooth. I don't have a food processor but my immersion blender works great. 

Scoop out the coconut cream and add to the mixture. 

On high, beat the coconut cream until fluffy (about 5-6 mins)

Scoop chocolate cream into coconut cream and fold until blended completely

Chill for a few hours until devouring. I like to serve it with lots of fresh fruit and shredded coconut.
