These are sooo yummy! I love how they turned out, tropical and yummy. The coconut whipping cream is the perfect pairing with the mango and pineapple. Crepes are always a fun way to fancy up breakfast that doesn't take a lot of time and can go sweet or savoury (always sweet for me!)
This is a pretty basic recipe, just pick your tropical fruits, mango and pineapple were our fruit of choice, and dice them up into bite size chunks.
for the coconut whipping cream, chill a can of coconut milk or cream in the fridge overnight. When you're ready to make the whip cream, flip the can upside down, open it and pour the liquid into a separate jar. You can add a bit of it back into the cream if you need to thin it down, and save the rest to add to smoothies or coffee!
Whip it up until it's light and fluffy. Add about a tsp of coconut sugar for some sweetness and whip some more.
Layer your crepe with the coconut whip cream, fresh fruit and a sprinkle of coconut flakes.
