I think it's safe to say that Dan and I (Tegan) are addicted to bliss balls. Ever since the first time I threw some together sometime last month, we have always had a batch in our fridge! They are my favourite snack/treat that perfectly pairs with my morning coffee, afternoon coffee or a bedtime snack! You can tweak the recipe as you like substituting different nut butters, or adding different seeds or nuts.
- 1 cup of dates (soak for about 4 hours in warm water)
- 1/2 cup shredded unsweetened coconut (plus about 1/4 cup to coat them after)
- 1/4 cup cocoa powder
- 1/4 cup chia seeds
- 1.5 tbsp hemp seeds
- 1/2 cup dry roasted peanuts (semi-ground)
- 1/4 cup flax seeds
- 1 tsp vanilla
- 3 tbsp coconut oil
- 4 tbsp peanut butter
Using an immersion blender, add all these ingredients in this order, starting with the pre-soaked dates, and moving down the list! I use a coffee grinder to grind the peanuts until they're more of an oatmeal texture, so there are still chunks of peanuts. Grind up the flax seeds well too.
Once all of the ingredients are well combined, press/roll them into bite size balls, and roll them in shredded coconut.
