We're well into pumpkin season and we've been baking up a storm. We've really been getting into finding healthier alternatives for yummy fall pastries like muffins and loaves! We have a yummy recipe coming up for plantain banana muffins next week that, our new fav! We made these tasty pumpkin pancakes using this mix. We used a bit less oil than called for and added 1/2 a cup of canned pumpkin, and a teaspoon of cinnamon.
For the Cream cheese syrup we mixed 1/2 cup of cream cheese with 1 cup of coconut milk, mixed it well with a hand mixer, it was sooo good with the pumpkin pancakes! Definitely not one of those healthy recipes I mentioned before, but its a nice sweet treat for a weekend brunch!
Sprinkle lots of cinnamon on top!
