Brewing Happiness // Fall Harvest Quinoa Bowl

Veggie dishes are just the BEST! Yams, onions, squash, pumpkins - we love em all! I have been cooking with so many veggies lately - last night we had spaghetti squash pasta with tomato sauce and zucchini. I can't wait to try this Harvest Quinoa Bowl by Haley of Brewing Happiness. She has so many amazing fall recipes on her site- check them out, and feed your bellies with wholesome meals this fall!

Ingredients:

INGREDIENTS:

1 cup quinoa
1/2 cup pumpkin puree
1 1/2 cup light coconut milk
1/4 cup almond milk (sub coconut, soy, or skim)
1/2 teaspoon salt
1 small sweet potato, sliced thinly
1 small acorn squash, de-skinned & chopped
1 leek, diced
1 sweet onion, diced
2 garlic cloves, minced
3 tablespoons olive oil
1/2 teaspoon pumpkin pie spice
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon pepper

INSTRUCTIONS: 

  1. Bring your quinoa, pumpkin puree, coconut milk, and salt to a boil over high heat. Once boiling, stir, add in 1/4 cup almond milk, lower heat, and add a lid. Let the quinoa cook for 10-15 minutes, stirring occasionally.
  2.  While the quinoa cooks, heat 3 tablespoons of olive oil over medium heat in a large skillet. Add your chopped sweet potato, acorn squash, leek, sweet onion, and garlic. Season with pumpkin pie spice, paprika, salt and pepper. Sautee uncovered for 5 minutes, then add a lid and sautee for another 5 minutes. 
  3. When both the quinoa and veggies are done, divide into 4 servings, top with pepitas and dig in!
