Recipe // Lime Chicken Tacos with Mango Salsa

This recipe is so easy and tasty! I love meals that can be prepped hours ahead that are quick and easy to throw together. First you want to poach the chicken

  • In a medium saucepan place the chicken breast in a single layer, they should fit snugly but not overlapping. For poached chicken you want to fill the pan with water until it just covers the chicken no more than an inch. Instead of water we used half lime juice and half light coconut milk. This gave it so much flavour and really complimented the mango salsa!
  • Bring the liquid to a boil, once it's boiling place a lid on top and turn to low so it's simmering. Set the timer to 10 minutes.
  • When the timer goes off, turn the burner off but leave the pot as it is and set the timer for another 10 minutes. After this your chicken will be done! Strain the chicken, let it cool a bit and then chop it up or shred it. 

While your cooking the chicken, make the salsa! Simply dice and mix together:

  • 1 mango
  • 2 avocado
  • 1/4 pineapple
  • 1 small red onion
  • handful of fresh cilantro
  • juice from 1 lime

We sprinkled some cayenne pepper on the chicken which really complimented the lime and was perfect with the sweet fruity salsa! These tacos were SO good. We served them on corn tortillas garnished with fresh mint, some sharp cheddar and a lime! We will definitely be making these often.

A few weeks ago we had the pleasure of attending a fun event at a local farm! It was the trailer premier for a movie coming out called Chicken Squad. We had a farm tour, held 5 day old baby chicks, and learned all about BC chicken and it cleared a lot of misconceptions that even we had about how our chickens are treated. BC has a high standard of chicken and it's not pumped with hormones and steroids like, I have to say, I definitely thought they were. 

We really had a fun night, eating the most delicious bbq'd chicken by one of Canada's top BBQ champions. The trailer just came out a few weeks ago and we got to watch the premier of it in the top loft of a barn covered in hay bales, it was so fun. You can check out the trailer > here < and we have to say, it's quite hilarious, and the team behind it is so kind and genuine. We're excited to watch the movie when it comes out, we love seeing people excited and passionate about something, it's contagious. You can see some photos from the event >here<
