Brewing Happiness // Winter Kale & Pomegranate Salad

Our girl Haley of Brewing Happiness did it again! She always blows us away with her incredible gulten-free, sugar-free recipes!! I'm going to go make this now, brb.

for the salad:

1 eggplant
2 small zucchini
3C kale
1/2 pomegranate
1/2C quinoa 
1.5C water
2TBSP olive oil 
salt & pepper

for the dressing:

1C cashews (soaked for 8 hours, then drained)
1/2 white onion, diced
1TBSP olive oil
1 lemon, juiced
1/2 pomegranate seeds
1/2TBSP crushed garlic
1/2C water
salt & pepper

for the salad:

  1. Preheat the oven to 350. 

  2. Slice the eggplant and zucchini into circles. 

  3. Drizzle with olive oil and season with salt & pepper. 
  4. Put in the oven for 40-45 minutes. 
  5. While the veggies are roasting, make the quinoa...
  6. Begin by taking a medium pot and dry toasting the quinoa over medium heat for 5 minutes.
  7. After 5 minutes, add 1.5C water and a pinch of salt to the pot and bring it to a boil over high heat.
  8. Once boiling, reduce heat to low, add a lid, and simmer for 10 minutes. 
  9. After 10 minutes, take the pot off the heat and let sit for another 10-15 minutes. 
  10. Begin to assemble the salad...
  11. In a large skillet, heat the kale and olive oil until the kale starts to soften. 
  12. Then add the quinoa to the skillet and mix. 
  13. Finally add the roasted eggplant and zucchini to the skillet and mix until incorporated. 
  14. Top the salad with pomegranate seeds, and your delicious Garlic & Pomegranate Dressing. 
  15. EAT. 

for the dressing:

  1. Sautee the onion in olive oil until translucent.

  2. Add all of the ingredients to a blender or food processor.

  3. Season with salt and pepper.
  4. Blend until smooth.
  5. Serve on your winter salad!
