Mmm Monday // Coconut Vanilla Granola


1 cup oats
1/4 cup quinoa
1/4 cup pumpkin seeds
1/4 cup slivered almonds
2 tbsp coconut oil
1/2 tsp cinnamon
1 tsp pure vanilla extract
1 tbsp honey
- mix all these ingredients together well in a bowl until all the oats are covered well in coconut oil.
 - spread on baking sheet and bake in the preheated oven at 350 for 25-30 minutes, check it every 10 minutes and give it a bit of a mix.
when granola looks like it's browning (usually after about 25 minutes, add 1/4 cup of coconut flakes, and dried fruit and raisins of your choice, I chopped some dates for this granola, craisins, raisins, dried apricots or any other fruit are great! let bake for another 5-10 minutes! Remove from oven and let cool on a baking sheet and store in sealed container or jar, enjoy with some greek yogurt and fresh fruit, or almond milk is yummy too!
