Mmm Monday // Summer Salad

This salad is so fresh and yummy, and for me (Bethany) since I'm allergic to nuts, the roasted chickpeas and sesame oil add a good nutty flavour. You could easily thrown some chicken or salmon on top and make it a full meal.

Ingredients:
Arugula, Washed
Cucumber Sliced
Strawberries, Sliced
Feta, Crumbled
Roasted Chickpeas
Pumpkin Seeds
Dried Apricots
Mint, finely chopped

Dressing:
2 Tbs Olive Oil
2 tsp Sesame Oil
1 Tbs Balsamic Vinegar
2 tsp Dijon Mustard
Juice from half a lemon
Salt & Pepper to taste

Toss all ingredients together and enjoy!
