Mmm Monday // Cinnamon Sugar Waffles with Caramelized Peaches

his was amazing. The type of breakfast you would make on a special occasion or if you're having your mom over for breakfast! It's a good one because you can make the waffles and keep them warm in a pre-heated oven (you know, for those times you want to avoid the awkwardness of trying to cook 5 different things at once and perfectly orchestrate it while entertaining a guest?)

Caramelized Peaches:

Combine 1/4 cup brown sugar, 1 tbsp melted butter, a pinch of cinnamon, and if you're feelin saucy a little bit of rum. Toss 3 peaches (pre sliced) and coat well. Spread on a baking sheet, bake in oven at 375 for about 10 minutes or until they're soft and the sugar has caramelized. 

Waffles:

- 2 eggs

- 2 cups all purpose flour

- 1 3/4 cup milk

- 1/2 cup vegetable oil

- 1 tbsp white sugar

- 4 tsp baking powder

- 1/4 tsp salt

- 1/2 tsp vanilla

- 1/2 tsp cinnamon

- 1/2 banana chopped into tiny pieces (optional)

Whip eggs until fluffy, add the rest of the ingredients, cook in pre-heated waffle maker. 

Sprinkle with cinnamon and sugar while warm, serve with lots of peaches, a little bit of real maple syrup, and enjoy!
