Mmmmonday // Avocado Basil Dressing


I pinned this recipe on pinterest a few weeks ago and couldn't wait to try it out! The famous green goddess dressing that keeps showing up on your feed, you know the one. Let me tell you it came through! It is delicious!! I cooked some noodles and dumped a bunch over pasta, and tried it as a salad dressing as well which was super good, especially with something sweet (Strawberries, craisins, cherry tomatoes). I haven't tried it but I know it would be delicious inside of my favourite sweet-potatoe chickpea burgers,  because it is very much like a creamy avocado pesto!

I used my hand blender for this, first i mixed the garlic, oil, water, and avacado, once that was smooth I added the herbs. once that was blended I added the lemon juice, apple cider vinegar, cayenne, salt, and agave. Store it in a tightly sealed jar for up to 5 days! Slop it, dip it, top it... enjoy.

- 1 garlic clove
- 2 avacados
- 7-8 tbsp water
- 1/4 cup extra virgin olive oil
- 5 tbsp apple cider vinegar
- 3-4 tbsp fresh lemon juice, to taste
- 1/2 cup packed fresh basil leaves
- 1/2 cup packed fresh parsley
- 1/2 cup packed green onion (dark green part only, not white)
- 5 tbsp apple cider vinegar
- 3-4 tbsp fresh lemon juice, to taste
- 1  tsp kosher salt, or to taste
- Pinch of cayenne (optional)
- Sweetener, to taste (I used 1/2 tsp agave)
