Mmm Monday // Oatmeal Cinnamon Breakfast Muffins

These are really great muffins to make for breakfast on the go or to save for a healthy snack with morning tea! They are very easy to make, super delicious, hearty, full of goodness! The oats need to sit in the milk for an hour before you can make the muffins, so remember that ahead of time!

pre-heat oven to 400
1 cup old fashioned rolled oats
1 cup milk

soak for 1 hour, then combine with the following ingredients:
1/2 cup of unsweetened applesauce
2 egg whites 

In a separate bowl whisk together:
1 cup whole wheat flour
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt 

add wet ingredients to dry and mix until just combined (don't overmix!) Spoon batter into sprayed muffin pan and sprinkle cinnamon and sugar, cook in oven for 20-25 minutes

You can freeze them and microwave them for a quick snack, I think i might need to make some more and do that to have a snack always on hand that's tasty and healthy! These would be great stuffed with raisins, nuts or sprinkled with coconut! Let us know if you try them and like them a different way!
