Mmmmonday // sweet potato chickpea burgers

This is my (Tegan) favorite recipe at the moment! Not only is it super easy to make, it's delicious, and healthy! I stumbled across it on you do... and saved it for a rainy day, and I'm so glad I tried it! This is my 4th time making it now and its always been great - I've tweaked it a little to my taste - oh, and my husband love loves these burgers, one of his favorite meals!

-Start off my preheating the oven to 375
-In a food processor or immersion blender, blend one can of chickpeas with 1/4 tsp baking soda, and a dash of salt and pepper.
- grate 1 small sweet potato and mix with chickpeas
- add 1 tsp of trader joes taco mix (optional! Gives it a bit more of a spicy kick)
- form mixture into patties and line on a greased baking sheet. Cover tightly with foil and bake for 20 minutes.
- Remove foil, coat burgers with spray. Bake until crisp and golden underneath, 20 to 25 minutes. Flip burgers; coat with cooking spray; bake until crisp on other side, 10 to 15 minutes.

Serve on bun with your favorite toppings - I love basil, spinach and mayo on my burger, but there are many options probably less simple, maybe more delicious than what I prefer!
