Mmm Monday // Corn, Bean & Shrimp Salad


This recipe is SO yummy, I (Tegan) ate it for lunch AND for dinner. It's super easy to make and because most of the ingredients come in a can, it's an easy one to have on hand for a last minute "oh I just threw it together" meal!

- 1 can of black beans
- 1 can of chickpeas
- 1 can of corn
- 1 avacado diced
- 1/2 cup of dry quinoa
- 1/3 cup of red onion, chopped
- chopped cilantro to taste

First cook the quinoa and chill it in the fridge, mix all together in a big bowl and then toss with dressing!

Dressing:
- 1/4 cup lemon juice
- 2 garlic cloves finely minced
- dash of sweetner (we used agave)
- 6 Tbsp extra virgin olive oil
- salt & pepper

I cooked up some chili garlic shrimp to add which was really nice, just grilled it in some butter with some garlic and chilis...so good. I can't wait to make this one again, it's a meal I will definitely repeat a lot, and also would be a great side dish to a mexican meal like enchiladas, I never know what I should make for a side dish with things like that and this would be perfect!
