Mmm Monday // Kale Guacamole & Tortilla Chips


1 avocado

4-5 stalks of kale

juice of half a lemon

Juice of half a lime

3/4 cup water (optional)

A handful of Cilantro

1 garlic clove, minced

Salt and Cayenne Pepper to taste

1 small tomato, diced

1/4 red or white onion. diced

Add all ingredients expect for tomato and onion to a food processor or blender, and blend until it is in small chunks. Add watr gradually if needed for blending. Stir in tomato and onion. Serve! 


Tear corn tortillas into chip sized pieces and lay them on a baking sheet. Lightly salt and bake at 350F for a bout 10 minutes, or until golden.
