Ok this soup is delicious, I cannot lie, I don't follow a recipe so i'll make these instructions as best I can!
1// First chop all your vegetables (large chunks)! I used 2 different types of squash, but just butternut is just fine!
2 // in a large pot, heat about 1tbsp Olive Oil add 1 chopped onion and a few cloves of minced garlic.
3// once the onion and garlic are nicely browned add approx. 4 cups of chicken stock (or veg stock if you want it vegetarian!)
4// add in your chopped up veggies. Bring soup to a boil, covered and let it keep boiling til they are soft and mashable (about 30 mins)
5// while it's boiling you can add a few spices, I usually add lots of curry powder and a bit of chili powder for some kick.
6// Turn off heat and let it cool down a bit, then add 1 can of coconut milk and blend it in batches (unless you have a fancier blender than mine!)
