These Chocolate covered peanut butter balls are sooo good!
All you need is,
2 cups of peanut butter
1/2 cup of room temp butter
1/2 tsp Vanilla extract
2 1/2 cups of convectioners sugar (icing sugar)
A bag of chocolate chips
Mix the peanut butter & butter, then add the Vanilla extract and Sugar.
Roll the dough into 1" Round balls. Place on a cookie sheet and refrigerate 'til firm. (2-3 hours) Or you can freeze them to make the process faster.
* Stick toothpicks into the peanut butter before you refrigerate.
Melt the Chocolate chips in a double boiler and add some butter to smoothen the chocolate.
Once the peanut butter is firm in the refrigerater, dip them into the chocolate and place back on the cookie sheet. Refrigerate for another few hours until chocolate is hardened.
* My Mom made these ADORABLE toothpicks for Tegan's wedding, a couple summers ago. She found beads and glued them to the end of toothpicks! Such a great idea to decorate your desserts!
