Start by cutting off the top of the apple, and scooping out the inside with a melon baller. I didn't have one so I cut around the inside edge and cut squares into the inside to make scooping with a spoon easier. Keep the insides but be sure to seperate the core.
With the insides mix them with sugar, brown sugar, and cinnamon. Add sugars and cinnamon to taste! For 6 apples I used 1/3 cup sugar, approx. 2 tbs brown sugar, and "a few shakes" of cinnamon. (its okay if you have some apple chunks and some mashed bits)
For the crust I used frozen phyllo pastry! Because I wanted to save a little time rather than making my own crust, but you can do whatever you prefer! Instructions for phyllo are on the box. Line the inside of the apple with pie crust, then fill with with apple mixture.
Then bake at 375F for approx 20 minutes or until crust is golden and apples are soft.
Once baked, I drizzled with maple syrup, and served with vanilla ice cream dusted with cinnamon and sugar!
They were super cute and delicious!!
