Mmm Monday // Guest Post: Kirsten Berlie // Guacamole

I am obsessed with guacamole. I will eat it on anything—burritos, chips, carrots, apples...even spaghetti. I love pretty much any kind, but my mom's is hands-down the best. Unfortunately, since I don't live at home anymore, my guacamole consumption has been dangerously low for the past few years so I decided it was time for me to take the plunge this week and make my own. Luckily, it's super easy!

(My mom makes hers with a food processor, but I decided to mash mine by hand since I lack the necessary blending tools. You can use a blender as well!)

First, gather all your ingredients.

What you'll need:

- 2 (large-ish) ripe avocados (3 if they're smaller)
- 1 clove garlic, minced
- 1 tbsp onion, minced (add more if you like!)
- 1/2 ripe tomato, seeded and chopped
- 3 slices jalapeño pepper, finely chopped & seeds removed
- 2 tbsp cilantro, chopped
- 2 tbsp lemon juice
- dash of salt and pepper

First, slice your avocados in half, remove the pit (but don't throw it out!) and scoop the avocado out with a spoon into a mixing bowl.

Mash them up with a fork (or blend them).

Add the onion, garlic, tomato, cilantro, jalapeño and lemon juice.

Mix it all up, add a dash of salt and pepper, and do a taste-test. Add more lemon juice if you want (I usually add a couple extra drops).
Remember the pit from the beginning? The one you didn't throw out? Pop it in the middle of your guac after you transfer it to tupperware to magically keep it from turning brown so fast.


 Voila! Let it chill in the refrigerator for a while and then you're ready for dipping!
