Mmm Monday // Crockpot Beef Stew + Caramel Popcorn

A couple delicious fall comfort foods! 

David and I got home from Arizona on wednesday and all of a sudden it felt like full on fall! It was about 10 degrees colder from when we left, and rainy. So this just seemed the perfect meal!! It feel so fall-ish to me to smell warm dinner cooking in the crockpot all day! This stew was really delicious, David is in love!

2 tbsp. vegetable oil
3/4 cup Flour
1 teaspoon Garlic powder
1 teaspoon Paprika
2 pounds lean stew beef
1 onion, quartered
1 clove garlic, minced
2 cups beef broth or bouillon
1 tsp. salt, or to taste
1 tbsp. lemon juice
1 tsp. sugar
1 tsp. Worcestershire sauce
1/2 tsp. pepper
1/2 tsp. paprika
2 bay leaves
6 carrots, cut in pieces
6 med. potatoes, cut in pieces
1/3 cup cold water blended with 3 tablespoons flour

Combine flour, paprika and garlic powder in a food storage bag; add stew beef and toss to coat. Brown coated beef in hot oil in a large skillet; transfer to the Crockpot. Add the remaining ingredients except for water and flour mixture. Cook on low for 8 to 10 hoursm, until vegetables are tender. About 30 minutes before serving, add flour mixture to the pot. Turn to high and cook until thickened.

Mmmm, Caramel Popcorn is my dream! This was so delicious and super easy (except for washing the caramel out of the dishes...)
20 Cups popped popcorn
1 Cup Butter
2 Cups Brown Sugar
1/2 Cup Corn Syrup
1 Tsp Salt
1/2 Tsp Baking Soda
1 Tsp Vanilla Extract
Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
 In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.
