I have this constant craving for Starbucks birthday cake pops... So, the other night when my hubby called to say he'd be home late I thought I'd get baking! I served these at a girls night I had the next day, and they were a hit! My husband, David, also tells everyone that walks through our front door "You have to try a cake pop!!"
So, pretty much... they're delicious! (and so easy!)
What you will need:
-1 cake mix (or you can try one from scratch...)
-1 can frosting (or, again, from scratch)
-1 bag of melting chips (they tend to stick better than regular melting chocolate) you can usually find them in the bulk aisle.
-Lollipop sticks, or straws (If you dont know where the heck to find lollipop sticks like me)
-Food Colouring and toppings ex. spirnkles, mini marshmallows, nuts, etc. (if desired)
Bake your cake!
Once the cake is cooled, use a fork to fluff and turn into crumbs.
Transfer the cake to a large bowl, and add about half the can of frosting to the bowl. Stir, add more frosting if needed. Mixture should be sticky enough to roll into balls, without just being "goopy".
Roll the cake mixture into balls, and place on a wax paper lined baking sheet.
Put the baking sheet into the freezer for 15 minutes.
Just before the 15 minutes is up, melt a small amount of melting chips in the microwave, just enought to dip the ends of your lollipop sticks/straws (stir every 30 seconds so you dont burn them).
Remove cake balls from freezer, dip the ends of each stick and push them about halfway into the cake ball. Then, put them back in the freezer for 30 min. (dont skip this or your sticks wont stay in the cake well)
Before the 30 miuntes is up melt enough melting chips to coat all your cake pops (make sure dish is deep enough to fully dip them) add food colouring if desired.
Remove the cake pops from the freezer, dip them all in the chocolate and add toppings before the chocolate hardens! let dry, If you want to serve them cake side up then let them dry with the sticks in a mug and the cake sticking out so that you dont create a flat bottom, I would put the mug in the freezer so the chocolate doesn't drip down the stick) But, If you dont mind serving them stick end up, then, just let them cool on the baking sheet!
