A Month of Breakfast // Chia Seed Parfait


Ok you guys, this is AMAZING! We are actually addicted. We discovered this recipe in our new favourite cookbook called Oh She Glows. It's extremely easy and the perfect on-the-go breakfast. In the recipe you need:

  • one cup of non-dairy milk (we love almond or coconut)
  • 3 Tbsp chia seeds
  • 1 tsp maple syrup
  • 1/2 tsp pure vanilla extract

Mix all of these ingredients together, you can whisk them in a bowl if you want to multiply the recipe and put the jars together the next day, or you can add them all into the mason jar and give it a good shake! Let them sit 8 hours to overnight. 

*we found it's yummy skipping the added maple syrup/vanilla step and using vanilla almond milk and it's delicous!

We used this granola recipe (substituting the quick oats for steel cut) which was delicious. I bet our Coconut Vanilla Granola recipe would be so tasty as well!
